Love These Lemon Pie Balls!

Makes 24

150g almond meal
45g desiccated coconut
3 lemons, juiced
1 lemon, zested
1 vanilla pod, split and scraped
125ml coconut oil
Pinch of salt
Stevia to taste 
60g shredded coconut for rolling 

    How To Create:

    1. Place all ingredients, except the coconut for rolling, in a high speed food processor and blitz for 30 seconds
    2. Roll mixture into balls and refrigerate until firm
    3. Store in airtight container in fridge for up to 2 weeks, can freeze
    4. Enjoy with a cup of your favourite herbal tea!
