150g almond meal45g desiccated coconut
3 lemons, juiced
1 lemon, zested
1 vanilla pod, split and scraped
125ml coconut oil
Pinch of salt
Stevia to taste
60g shredded coconut for rolling
How To Create:
- Place all ingredients, except the coconut for rolling, in a high speed food processor and blitz for 30 seconds
- Roll mixture into balls and refrigerate until firm
- Store in airtight container in fridge for up to 2 weeks, can freeze
- Enjoy with a cup of your favourite herbal tea!
